Recipe: cranberry and port sauce

Andy McLeish of Chapter One shares his all-time favourite Christmas dinner sides

Ingredients

200g port

100g orange juice

100g pineapple juice

300g white sugar

500g fresh cranberries

Method

Place the port, orange juice, pineapple juice and sugar in a pan. Bring to the boil and reduce until the sugar starts to turn to a very light caramel. Add the fresh cranberries, reduce the heat and slowly cook for a further five minutes until the cranberries are soft. Remove from the heat and place in a sealable jar (jam jar). Seal and leave to cool.
