Tell us a bit about yourself
I am from Paris, where I also trained, my father was a chef and had a two-Michelin star restaurant 20 years ago. My earliest memories are being in my high chair in the kitchen watching him at work. I started to cook my own steak and saut potatoes at about five or six. I came to the UK three years ago, starting in Brighton, and worked in Canterbury before coming to Howfield Manor last March.


Whats your signature dish?
I dont want to focus on just one dish I love cooking sauces best of all, but I think I will always keep the monkfish on the menu, it works at all times of year.


Your top cookery tip for readers?
Learn the basic techniques first then make sure you stick to the recipe.


Who has influenced you most?
My father.


Your must-have kitchen gadget?
Its not a gadget its the kitchen garden, where we grow all our own herbs, salad leaves and edible flowers.


Who would you like to cook for?
I would love to have cooked for the legendary French chef Georges Escoffier.
