Meet Dev Biswal, executive chef of The Indian Princess

Tell us about yourself
I am passionate about cuisine from the Indian sub continent and promoting authentic Asian cuisine to fine dine and gourmet status in the UK. I organises live cookery sessions to teach customers about the difference between the prevalent curry culture in the UK and authentic Indian food.

What's your signature dish?
Fillet of freshwater Nile Perch, pan grilled with peppers, coriander, fenugreek and carom seeds.

Your top cookery tip for readers?
Flavours, textures and aromas are appeasement of the senses. Like any other art form such as music or painting, there are no rules. It's your own creativity that is the most important factor.

Who has influenced you most?
Quite a few people from my past, especially old employers and mentors.

A sharp knife
